10-Ingredients Vibrant Raspberry and Matcha Mochi Doughnuts.
Ingredients (Doughnuts):
- 2 cups glutinous rice flour
- 1 ½ tsp baking powder
- ½ cup granulated sugar
- ½ tsp salt
- 1 egg
- ½ cup + 2 tbsp warm water
- Vegetable oil
Ingredients (Matcha Glaze):
- 1 cup icing sugar
- ½ tsp matcha
- 2 tbsp milk
Ingredients (Raspberry Glaze):
- 1 cup frozen raspberry
- 1 cup icing sugar
Instructions:
- Whisk glutinous rice, flour, sugar, baking powder, and salt in a large bowl. Create a well in the center and set it aside.
- Whisk the egg with the water and pour in the flour well. Mix the dough until firm with a spatula. Knead with your hands until dough is slightly tacky and soft. Cover with plastic and let sit in a warm area for ~30 mins.
- Heat 4in oil in a heavy bottom saucepan to about 375°F. Cut and grease lightly 4×4” parchment paper squares.
- Transfer dough to clean surface. Divide to eight portions (65g/each) and roll them into round balls. Work the same steps in the round balls.
- Arrange the round balls in a ring while touching each other.
- Carefully place the doughnuts in hot oil until it rises. Remove parchment paper and fry again for 4-6 minutes until golden brown. Let it cool completely.
- Whisk the icing sugar, matcha, and milk to desired consistency. Create a raspberry puree by cooking the frozen raspberry on medium-high heat for ~5mins. Strain through a fine sieve. Whisk the icing sugar and 5-6 tsp of puree to desired consistency.
- Dip each doughnut into the icing and let it cool at room temperature.
